Strawberry Choco Pie Cupcakes

Ingredients: (makes 12 cupcakes)

  • ¾ cup vegetable oil 1 + ¼ cup superfine sugar
  • 1 cup yogurt/ hung curd
  • 1+ ½ cup maida
  • ¼ cup cocoa powder
  • ¾ cup ground Strawberry Choco Pie
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ¼ cup milk, room temp

Process:

  1. In a bowl, take the oil and add the sugar. Whisk it until evenly mixed.
  2. Add the yogurt & whisk gently to incorporate well in the sugar mixture
  3. Into the above mixture, add sifted maida, cocoa powder, ground Strawberry Choco Pie, baking powder and baking soda
  4. Fold in these dry ingredients into the wet mixture underneath
  5. Lastly, add the milk into the mixture and mix well
  6. Transfer the batter up to half height of the cupcake holder or tin to achieve the right height of cupcakes.
    Tip: To ensure even sized cupcakes, transfer the batter to the tin using an ice-cream scoop
  7. Insert into a pre-heated oven and bake for 180 degree celsius for 20-25 minutes
  8. Take out of the oven and transfer them to a cake stand
  9. Let them cool down completely, then decorate with strawberry icing & favourite valentine-y sprinkles
  10. Serve these little parcels of love to your valentine!
